Tomato Basil Soup

A velvety roasted tomato soup finished with fresh basil and a swirl of cream.

Ingredients

  • 2 lbs ripe tomatoes, halved
  • 1 onion, quartered
  • 4 cloves garlic, unpeeled
  • 3 tablespoons olive oil
  • 4 cups vegetable broth
  • 1/2 cup fresh basil leaves
  • 1/4 cup heavy cream
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss tomatoes, onion, and garlic with olive oil on a baking sheet.

  2. Roast for 25 minutes until tomatoes are caramelized.

  3. Squeeze roasted garlic from skins. Transfer all vegetables to a blender with vegetable broth.

  4. Blend until smooth. Pour into a pot and simmer for 10 minutes.

  5. Stir in basil, cream, and sugar. Season with salt and pepper.

  6. Serve with crusty bread or a grilled cheese sandwich.
