Tomato Basil Soup
A velvety roasted tomato soup finished with fresh basil and a swirl of cream.

Ingredients
- 2 lbs ripe tomatoes, halved
- 1 onion, quartered
- 4 cloves garlic, unpeeled
- 3 tablespoons olive oil
- 4 cups vegetable broth
- 1/2 cup fresh basil leaves
- 1/4 cup heavy cream
- 1 teaspoon sugar
- Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C). Toss tomatoes, onion, and garlic with olive oil on a baking sheet.
Roast for 25 minutes until tomatoes are caramelized.
Squeeze roasted garlic from skins. Transfer all vegetables to a blender with vegetable broth.
Blend until smooth. Pour into a pot and simmer for 10 minutes.
Stir in basil, cream, and sugar. Season with salt and pepper.
Serve with crusty bread or a grilled cheese sandwich.
