Grilled Salmon with Lemon Dill

  • 4 salmon fillets (6 oz each)
  • 3 tablespoons olive oil
  • 2 lemons (juice and zest)
  • 3 tablespoons fresh dill, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Lemon wedges for serving

Instructions

  1. Whisk together olive oil, lemon juice, lemon zest, dill, garlic, salt, and pepper.

  2. Place salmon in a dish and pour marinade over. Let sit for 15 minutes.

  3. Preheat grill to medium-high heat (about 400°F / 200°C).

  4. Oil grill grates. Place salmon skin-side down and grill for 5–6 minutes.

  5. Flip carefully and grill for another 4–5 minutes until internal temperature reaches 145°F (63°C).

  6. Serve with lemon wedges and a side of roasted vegetables or salad.
