Salad

  • 2 heads romaine lettuce, chopped
  • 1/2 cup Parmesan cheese, shaved
  • 1 cup homemade croutons

Dressing

  • 3 cloves garlic, minced
  • 2 anchovy fillets, minced
  • 1 egg yolk
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Mash garlic and anchovies into a paste using a mortar and pestle or fork.

  2. Whisk in egg yolk, lemon juice, and Dijon mustard.

  3. Slowly drizzle in olive oil while whisking until emulsified. Season with salt and pepper.

  4. Toss romaine with dressing until evenly coated.

  5. Top with Parmesan shavings and croutons. Serve immediately.
