Blueberry Pancakes

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons melted butter
  • 1 cup fresh blueberries
  • Maple syrup and butter for serving

Instructions

  1. Sift together flour, baking powder, sugar, and salt in a large bowl.

  2. Make a well in the center. Pour in milk, egg, and melted butter. Mix until just combined — lumps are okay.

  3. Gently fold in blueberries.

  4. Heat a lightly oiled griddle over medium-high heat. Pour 1/4 cup batter per pancake.

  5. Cook until bubbles form on surface, then flip. Cook until golden brown, about 2 minutes per side.

  6. Serve warm with maple syrup and butter.
