Avocado Toast with Poached Egg

Smashed avocado on toasted sourdough topped with a perfectly poached egg.

  • 2 slices sourdough bread
  • 1 ripe avocado
  • 2 eggs
  • 1 tablespoon white vinegar
  • 1 tablespoon lemon juice
  • Red pepper flakes
  • Flaky sea salt
  • Freshly cracked black pepper

Instructions

  1. Toast sourdough bread until golden and crisp.

  2. Bring a pot of water to a gentle simmer. Add vinegar.

  3. Crack each egg into a small cup. Create a whirlpool in the water and gently slide egg in. Poach for 3–4 minutes.

  4. Mash avocado with lemon juice, salt, and pepper.

  5. Spread avocado on toast. Top each slice with a poached egg.

  6. Finish with red pepper flakes and flaky sea salt. Serve immediately.
