Avocado Toast with Poached Egg

Ingredients
- 2 slices sourdough bread
- 1 ripe avocado
- 2 eggs
- 1 tablespoon white vinegar
- 1 tablespoon lemon juice
- Red pepper flakes
- Flaky sea salt
- Freshly cracked black pepper
Instructions
Toast sourdough bread until golden and crisp.
Bring a pot of water to a gentle simmer. Add vinegar.
Crack each egg into a small cup. Create a whirlpool in the water and gently slide egg in. Poach for 3–4 minutes.
Mash avocado with lemon juice, salt, and pepper.
Spread avocado on toast. Top each slice with a poached egg.
Finish with red pepper flakes and flaky sea salt. Serve immediately.
